I hope your BBQ Blitz is going well. We had guest over last night and I really wanted to test out the Weber Smokey Mountain and let it smoke a pork butt while I was at work for eight hours. Although I am confident in the capabilities of the WSM, you never know what might happen while gone for eight hours. We decided to make lime chili chicken fajitas. The chicken comes off the grill with an amazing taste. The guests loved it. When guests are happy, you should be happy. Recipe for chicken below.
Last week, I had the pleasure to interview Sean Rice from the Meat Me blog. Sean’s blog is about all things meat, which includes BBQ. Sean gave us his thoughts on the current judging standards of BBQ competition and how it changes throughout the year. Sean gives us his “Best Of” wings, hot dogs, brisket, etc. in our quickfire questions. To wrap it up we talk a little NHL and the recent purchases the MN Wild have made.
Hot Dogs – Tony Dog

Lime Chili Chicken
4 skinless, boneless chicken breasts
1 T paprika(smoked paprika always has awesome flavor)
2 T chili oil
1/2 T chili powder
finely grated rind and juice of 1 lime
dash of raw sugar(optional)
15 soaked bamboo skewers
Cut each breast lengthwise into strips 1/2-3/4″ wide. Place strips in a large bowl. Add the ingredients and mix to cover all the chicken. Cover and let chicken marinate for at least an hour, and no longer than 3 hours in the refrigerator. Remove from the refrigerator at least 30 minutes before cooking.
Thread the chicken pieces onto each skewer. Place on a grill with hot coals and cook for 3-5 minutes each side until cooked through.
Serve the chicken with warm tortillas, lettuce, sour cream, guacamole, or whatever ingredients you like with taco’s.
